This is my first recipe post, so please be kind. This is a pizza that I created after eating Mazzio's chicken alfredo pizza. This is a recipe I pull out when we are entertaining because it usually is a crowd-please-r. You really can make it your own. In fact, I don't think that I have made it the same way twice.
Crust: Recipe from More-with-Less cookbook
Combine in large bowl:
1c warm water
1 pkg yeast
When dissolved, add:
1T sugar
1 1/2 t salt
2 T vegetable oil
1 1/4 c flour
Beat until smooth: Add:
2 c additional flour or enough to make a stiff dough (I usually use some whole wheat flour but not all because it seems to be too dry)
Knead until elastic, about 5 minutes. Place in greased bowl and let rise until double, about 45 minutes. Form 2 balls. Pat and stretch to fill 2 greased pizza pans (or one if you want a thicker crust). Let rise 10 minutes.
The good part:
1 jar Alfredo sauce (I like Great Value brand or Ragu)
2 chicken breast
salt
pepper
garlic powder
shredded cheese (your favorite- I used colby & monterey jack)
green pepper (optional)
onion (optional)
tomato (optional)
crumbled bacon (optional)
After the crust is on the pan, bake (or grill) for a few minutes- 5 at the most. Then put your toppings on starting with the alfredo- I don't usually use the whole jar- use how ever much you prefer. Then put on your chicken- it needs to be cooked first. I prefer to cook mine in a pan with seasonings like salt, pepper, garlic powder, and other random seasonings. Once they are cooked through I cut the chicken in bite sized pieces. Once the chicken is on, top with other veggies, cooked crumbled bacon, and cheese. Put in oven at 350 for 15-20 minutes or put on grill until done. (When we grilled the pizza we had to use it in a pan because the crust wasn't strong enough to hold the pizza on its own.) Once it is all hot and melty, it is ready to eat! Enjoy!
